Risshun Asashibori is a special Japanese sake that is brewed simultaneously at breweries all over the country on the day of Risshun, which is considered the beginning of spring on the calendar. I look forward to this time of year every year, and this year I was able to enjoy Risshun Asashibori Tenranzan Junmai Ginjo Namazake Usunigori for the first time.

What is Risshun Asashibori?

Risshun Asashibori is a very auspicious sake that is brewed on the day of Risshun of that year and enjoyed on the same day. Each brewery releases its own Risshun Asashibori with its own unique characteristics, and it attracts a lot of attention every year.

This time, I purchased Risshun Asashibori Tenranzan Junmai Ginjo Namazake Usunigori at Shiratoriya Shoten, which I introduced in a previous article.

Shiratoriya Shoten has a wide selection of Japanese sake, and the owner’s selection is wonderful. When I consulted with them about Risshun Asashibori, which I had been curious about for some time, they recommended this Tenranzan.

Igarashi Sake Brewery’s “Tenranzan”

“Tenranzan” is a Japanese sake brewed by Igarashi Sake Brewery in Hanno City, Saitama Prefecture. Igarashi Sake Brewery is a popular local brewery known for its brands such as “Tenranzan” and “Igarashi”.

The “Risshun Asashibori Tenranzan Junmai Ginjo Namazake Usunigori” that I received this time is characterized by the use of Ginginga rice (Kojimai 55% / Kakemai 55%), which is rare in Saitama Prefecture.

Now, let’s drink!

When I poured it into a glass, the soft and gentle aroma unique to Usunigori spread. When I took a sip, the mellow sweetness and the subtle sourness harmonized, creating a very pleasant taste.

I completely agree with the blogger Ai’s comment, “I prefer to drink it as an aperitif rather than pairing it with food.” This sake is recommended to be enjoyed slowly as an aperitif.
