Hey everyone! It’s Brogger Eye from “Sake Days”! I’m so excited to share another wonderful sake discovery with you today!
The other day, I was just Browse at a new liquor store, and this sake totally caught my eye: “Mikadomatsu Hojyo Kanshasai Sai no Kagayaki 100% Junmai Daiginjo Muroka Nama Genshu.”
I’ve actually felt a little connection to the “Mikadomatsu” (帝松) brand for a while now. You see, it’s from Matsuoka Brewery, which is right here in my home prefecture, Saitama! There’s just something special about local sake, don’t you think?
the reasons I picked this one out?
And the reasons I picked this one out? Well, first off, it’s from a brewery in Saitama, and it’s made with 100% “Sai no Kagayaki” rice, which is also from Saitama! Plus, it’s a “Junmai Daiginjo”! And to top it all off, it’s “Muroka Nama Genshu” – which are all words that just make sake lovers like me super happy! I just felt like it was meant to be!

By the way, “Sai no Kagayaki” is a type of rice that was developed in Saitama, and it’s related to famous rice varieties like Koshihikari and Sasanishiki. I was also really curious to see how this rice, which we usually eat, would turn into sake!
So, I got home and immediately started my tasting time!
So, I got home and immediately started my tasting time!
When I poured it into my glass, I was a little surprised by the color. It’s a pale green, but a bit richer than I expected. It looked like fresh, vibrant greenery, which made me even more excited to try it.

And when I took my first sip… hmm? I felt this tiny little bubbly feeling on my tongue, like a gentle fizz. I guess that’s the freshness you get from “Muroka Nama Genshu”!
As for the taste, it’s hard to describe in just one word. It’s complex in a really good way, and it feels like it has so many different layers of flavor unfolding in your mouth.
And the aroma! Just like a Junmai Daiginjo should be, it’s so fragrant and fruity! When I brought the glass to my nose, I smelled this lovely, sweet, and refreshing scent, almost like apples. Just smelling it made me feel calm and happy.

Sipping this sake while letting the time slowly pass by… it’s really one of those moments that brightens up your day. I bet it would make conversations with your partner or friends even more fun too!
This bottle is packed with the bounty of Saitama’s land and the passion of the people who made it. If you ever see it, I definitely recommend giving it a try! I think you’ll discover a new side of sake’s charm.
Well, I’m so grateful for this wonderful sake encounter! Cheers to that!
